Enjoy these tasty foods on your next picnic or trip.
Bagel Chips
Slice 1 bagel into thin disks. Brush with butter or olive oil. Bake at 375 degrees until crisp and golden.
Easy Curry Puffs
- 1 pkg puff pastry
- 5 tablespoons oil
- 1 medium red onion (finely chopped)
- 1/2 teaspoon quorma powder or chicken curry powder
- 2 teaspoons meat or chicken curry powder
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric powder
- 1/2 cup of finely diced chicken breast meat
- 2 large potatoes (boiled and finely diced)
- 1 1/2 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- eggwash (optional)
Heat oil and fry onion gently until golden brown. Add the quorma powder, curry powder, chili, turmeric and fry gently. Add the chicken, potatoes, sugar, pepper, salt and cook for 5 minutes. Mix well and leave aside to cool.
Cut puff pastry into 10cm x 10 cm squares. Place a heaping tablespoon of filling onto each square. Fold over into triangles, pinching to seal. Brush tops with eggwash if you like. Bake according to package instructions.
Variation: Replace filling with potato curry for a vegetarian option.
Variation: This recipe is Malaysian in origin. Use ground beef instead of chicken and potatoes to approximate the Chinese pastry.
Fish Balls with Peanut Sauce
- 1 lb fish balls
- ¼ cup fresh cilantro, chopped
Sauce:
- 1 ½ cups creamy peanut peanut butter
- ½ cup coconut milk
- 3 tbsp water
- 3 tbsp soy sauce
- 1 tbsp each fish sauce, chili sauce, and minced ginger
- 1 clove garlic, crushed and minced
Mix together sauce ingredients. Cook fish balls in boiling water until they float. Mix cilantro into sauce just before eating. Dip fish balls into sauce and enjoy!
Salt and Pepper Tofu (spicy)
- 1/2 pound Chinese-style fried tofu
- 2 scallions, sliced
- 1 bird’s-eye chili, sliced
- 1 teaspoon ground garlic
- 1 tablespoon salt
- 1 teaspoon sugar
- 1 teaspoon fine white pepper
- 1 teaspoon ground ginger
- 1/2 teaspoon five-spice powder
Heat a little oil over high heat. Add the tofu in a single layer, frying about 2 minutes on each side. Remove to a plate. Over high heat add another two teaspoons of oil. Stir-fry the scallions, chili, and garlic for 30 seconds. Add the tofu and remaining ingredients. Toss to combine.
Pan-fried Tofu
Cut 1 brick of tofu into thin squares, approximately 5 cm x 5 cm x 2 cm. Heat oil in pan on medium heat. Place squares on pan in a single layer. Sprinkle with a dash or sea salt. Turn when underside is brown and crispy. When second side is also brown and crispy, tofu is ready to eat.
