Sandwiches and Wraps
Enjoy these tasty foods on your next picnic or trip.
Chicken and Vegetable Wraps
- 6 large tortilla shells
- 1 cup cooked and cubed chicken
- 1 avocado, sliced
- 4 leaves romaine lettuce, washed and dried
- ½ Long English cucumber, julienned
- ¼ red pepper, diced
- ½ cup baby spinach leaves
- ½ cup sliced mushrooms
- 1 tomato, sliced
- 2 thin slices red onion
- ¼ cup mayonnaise
- 2 tbsp Dijon mustard
- Salt and pepper
Rip lettuce into strips or bite-sized pieces. On each tortilla shell, layer ¼ of each topping close to the bottom. Sprinkle with salt and pepper. Fold in sides of shell and roll away from yourself, securing with a toothpick. Place on a baking sheet and bake at 350 degrees for 12 – 15 minutes. This will stiffen the shells so they will not come apart. Alternatively, wrap tightly with saran wrap.
Pinwheel Sandwiches
- Tortilla shells
- Cream cheese
- Ham
- Baby spinach
Spread cream cheese over tortilla shell. Layer ham and spinach on top. Roll up tightly. Cut crosswise into circles.
